This herbal tea brews into an amazingly deep blue color.  The tea has a vegetable-like quality with some substance to it.  It's interesting on its own, but the fun part is when you add citrus to it as the brew will turn purple before your eyes.  
 
A fun one to mix with other other teas, cocktails or food.
